Freeze Dried Soup

What do you do when you get home from a trip and there is no food in the fridge? I made a vegetable soup using almost all freeze dried vegetables. We bought small packets of many different kinds so that we could try them out. Living in an hurricane prone area we thought it would be nice to have some things that didn't rely on the freezer and bought some BIG cans but I wouldn't open them. Each can once opened needs to be used up in a year soooooooooooo what if we didn't like them? How to try it? That's why we got these at Thrive. So I'll be trying them in a variety of recipes and reporting to you.

Freeze Dried Soup
1 can (28 oz.) diced tomatoes
1/2 teaspoon granulated garlic
4 Tablespoons freeze-dried onion
4 Tablespoons freeze-dried celery
2 Tablespoons mushrooms
2 Tablespoons peas
4 Tablespoons carrots
3 Tablespoons cauliflower
3 Tablespoons spinach
2 Tablespoons green pepper (crushed)
1 teaspoon chicken base
2 cans rinsed and drained black beans
2 Tablespoons Italian Seasoning 
1 1/2 teaspoon basil
2 tomato cans of water
Combine and simmer until your husband gets home for dinner...or about 15 minutes.


The verdict? We all liked it and I'll make it many many times in the future. We've already made kits for future camping trips. :P
