Andrew reads cookbooks occasionally and decides to fix something that catches his fancy. This time it was Spring rolls. We finally found the wrappers at the Hong Kong Market that is about 20 minutes from our house and he cooked the rice noodles (yuck) and put lettuce, bean sprouts, cilantro, peanuts and soy sauce on the table.With a pie-pan of hot water we each made our 'roll'.
Here he is with the 'breakfast' roll he made the next morning. Everyone made themselves more the next day. We learned however that soaking the wrapper for 30 seconds, as written in the recipe, was about 25 seconds too long.
I also learned that I'd rather have cabbage or green peppers or green beans,or left over rice... in my wrapper..... anything but rice noodles! Andrew loved them and we just bought more wrappers for another dinner.
