Preheat oven to 375 degrees. Using your saucepan, I used one that could go in the oven, bring 5 cups water to a boil and salt and rice, 3 cups brown rice. Cover with foil and move it to the oven. Take it out 60 minutes later. (This method is shared by Alton Brown
here.) THEN right before it is finished in the oven zest a lime, juice it, chop some cilantro then add half of the rice, or use 2 limes and do the whole batch of rice. So good.
It is Jeffrey's 17th birthday party and he wanted a VEGAN meal. So I made the bits for a build your own burrito party.
- black beans-scratch made
- lime cilantro rice
- salsa (fresh tomatoes-so good)
- diced tomatoes (Froberg's homegrown)
- cilantro
- diced jalapenos (Jeffrey prepared these, I put 2 in, and it is too mild, even for me!)
- tortillas
So good. Now blueberry pie for dessert! (I sort of made the pie...canned blueberry pie filling, frozen pie crust.)(The pie was disapointing to me but J ate 4 pieces.)
