My 15 year old son is vegan. That means he will not eat ANY thing with eggs or milk in it. So what do you do for cake? His birthday was Saturday and I made him a chocolate cake easily. The cake mix we chose was vegan and I added most of a can of pumpkin (leftover from cinnamon rolls last week). It was too thick so added about 1/2 cup of applesauce....it was still too thick so I added almond milk until it looked right. Poured into 2 round cake pans and backed it for 35 minutes at 350. Moist, a little dense but still good.
I was amazed, did not measure anything....which means I did not have much to wash; a bowl and a wisk, and a rubber spatula.
