Andrew (13 years old) was reading a Ve-gan book and found a recipe for Macaroni and Cheese that he wanted to try. So I bought some raw cashews and pimentos and he made the 'cheese' this morning. I cooked the whole wheat macaroni and added the 'cheese' this evening. The shocking thing to me was that it tasted kind of cheesy and we ALL liked it.
Just in case you are interested....here's the Cheese recipe:

Keep in mind that Cashews are not a diet food, neither are they cheap, but cheese is also not cheap. Our HEB carries cashews in many forms including raw.
